This high-grown coffee comes from small-scale producers in Chiapas, one of Mexico’s premier coffee regions, renowned for its nutrient-rich volcanic soil and diverse microclimates. Grown at elevations between 1,000 and 1,250 meters, this coffee stands out for its large bean size and smooth, balanced flavor profile.
The coffee is processed using the washed, or "wet," method. This involves de-pulping the ripe cherries to remove their outer skin, followed by a 12-18 hour fermentation period, depending on ambient conditions. After fermentation, the beans are thoroughly washed in clean water channels to remove any remaining mucilage. They are then dried on patios, where the parchment is raked and turned regularly to ensure even drying until they reach an ideal moisture content of 12%.
The HG (High Grown) designation indicates that the coffee was cultivated at approximately 1,200 meters, synonymous with HB (Hard Bean). The EP (European Preparation) standard signifies that the green beans are meticulously hand-sorted to eliminate defects and foreign materials, ensuring a high-quality product with no more than 15 imperfections per 300 grams.
